3 1/4 c. all purpose flour
2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
4 large eggs at room temp for 30 minutes
2 1/3 c. sugar
1 c. vegetable oil
3 c. coarsely mashed ripe bananas (6 large)- ok what i do with this is use 2 cups of babyfood bananas, and then 2 mashed bananas, because babyfood bananas are smoother and give it more moisture!
1/4 c. creme fresh or sour cream (i use the latter)
2 tsp. vanilla
over to 350
butter and flour 2 9x5x3" loaf pans
sift together flour, baking soda, sinnamon, and salt into a bowl
beat together eggs and sugar in electric mixer at medium high speed until thick and pale and mixture forms a ribbon when beater is lifted (10 mins).
reduce speed to low and add in oil in a slow stream. mix in bananas, sour cream and vanilla.
remove bowl and fold flour into mixture.
divide between loaf bans, bake in the middle of the oven for 1-1.25 hours.
****TIP!-i pour half the batter into one pan, and then i add chocolate chips into the batter for the second loaf, so you have both banana bread and banana chocolate chip bread!
